The mushroom tradition has been very important in Cameros Nuevo (New Cameros). Nowadays, many municipalities regulate its collection in order to control the growth.
In spring, the mushroom called Serenduela, the mushroom of the thistle and the spring mushroom or Perrochico, are the most popular ones. In the fall, it was common to collect the Níscalo in the pine forests and, little by little, the interest for the different kinds of boletus, has changed habits.
In the traditional kitchen, the mushrooms have been present in broths, stews and scrambled eggs, especially with spring mushrooms. Some restaurants prepare autumn sessions in which they match mushroom and big game dishes.
