9 · The trouts


The Iregua River has provided food and leisure to the Serranos. Very few remember the tasty crab with spicy tomato, a dish which is already part of history.
In trout season, caught with very different fishing methods, this fish was eaten fried with bacon. For its preservation, they used to prepare vinegar marinades that, along with vegetables such as leeks and carrots, were stores in clay pots for months.
Other fish such as loinas, cachuelos, bobos and madrillas, were fried during times of plenty, but today are only a memory. Currently, a tapa of trout is very successful in Laurel Street in Logroño (street for tapas), while in Villanueva, a painter reflected his abundant fishing on a wall.
